Have you ever pinned a recipe on Pinterest, bought the ingredients, and then realized the link was dead when you went to start cooking?
That happened to me tonight with this Cheesy Ranch Chicken Orzo recipe… So I winged it, and it was a complete success!! This dish is creamy and cheesy with just the right amount of zingy ranch flavor. We had it with a side of broccoli to make it a little healthy since it’s clearly not.
Here’s what you need, and I promise I won’t pull this post down and leave anyone hanging – so please pin it and share it!
2 large chicken breasts, diced
1 tbsp butter
2 cups chicken broth
1 cup orzo
4oz cream cheese cut into 4 squares
3 tbsp dry ranch mix (about 3/4 of a packet)
1/2 cup grated Parmesan cheese
Set the Instant Pot on saute and melt the butter. Add chicken and cook just until it starts to turn white.
Stir in the chicken broth and ranch mix.
Add the cream cheese evenly on top of the chicken.
Add the orzo.
Stir and cover. Cook on high pressure for 8 minutes. Once it is done, let it sit and naturally release for 5 minutes. Then quick release the rest of the pressure.
When you take the cover off it will look watery and the cream cheese will still be in chunks. Stir it and it will turn into creamy perfection. Add the Parmesan cheese and stir a little bit more. Serve, top with some more Parmesan, and enjoy!
The original recipe had equal parts orzo and broth but I had a feeling it might need more liquid, and I was right. It also didn’t say to cut up the chicken but again, I thought it might take too long to cook the breasts all the way through so I chopped them up. Another good decision. Lastly, it did not call for Parmesan cheese but I added it because you can never have too much cheese. As for the wasted 1/4 of a ranch packet… You could put it all in there but it will probably be too strong. I looked up some other ranch recipes and most of them say not to use an entire packet or the flavor will be too much.
That’s all for tonight. I’m loving this Instant Pot, I have 2 cookbooks on the way from Amazon… One of them has healthy recipes which I really need to start making, but damn these cheesy ones are good!
